Diabetic Snack: Low Carb Nachos
Being a diabetic I tend not to give into my temptation for nachos. I love nachos. But I’ve never been able to find a low carb nacho recipe. Just writing that I love nachos doesn’t really drive home the feeling I hold for this tasty treat. That’s why I was so happy when my wife found some recipes for diabetic appetizers which included a low carb nacho recipe.

Instead of using your regular store bought tortilla chips these diabetic friendly nachos are made from pita chips. My wife was able to find pita bread that contained only 4g of net carbs. The diabetic nachos recipe calls for six 6 inch pitas so even if I ate all 72 pita chips that this recipe makes, I would still be at an acceptable level of carbs (24). Not that I would eat that much. *wink*
Make The Pita Chips
Ingredients
- Six 6-inch pita breads (lowest carb count you can find)
- Olive Oil Cooking Spray
- Large non-stick cooking sheet
What To Do
- Cut each pita bread in half
- Cut each half into 3 triangles
- Separate the 2 layers of each triangles (will give you 12 triangles per pita)
- Preheat oven to 375 degrees
- Lay single layer of pita triangles on the cooking sheet (may need to cook in more than one batch)
- Lightly spray the triangles with the cooking spray – you can also season however you choose
- Bake 7 minutes, turn pitas over and continue baking for additional 5 minutes
Make The Nachos
So there you have the chips portion of the nachos. Do I really need to go into details about how to make nachos? I didn’t think so. Basically you load up the chips with some of your favorite toppings. Like lettuce, tomato, onion, hot peppers, maybe a little no-fat cheese and bake for a few in the oven until the cheese melts.
Once the cheese is melted take those babies out (let them cool) and then shovel them into your mouth. You have just eaten your first diabetes friendly plate of nachos.
